Killen's Barbecue is a classic Texas smokehouse.
Like most Texas barbecue joints it's all about the beef at Killen's. Brisket is my favorite meat but the Beef Rib and Wagyu Burnt Ends are incredible as well. Killen's offers a variety of meat by the pound, sandwhiches, sides, and plates. My preference is to go with the meat plate. Most meat choices are available in this option which allows you to choose two meets and two sides. To date I've tried the brisket (I prefer moist/fatty over lean), the pulled pork, and the pork & beef sausage. All have been absolutely fantastic.
When it comes to sides, I always go for the baked beans and potato salad. Hubs loves the fried mac and cheese. And we definitely can't pass on dessert either. The banana pudding is my personal favorite but there are some other really delicious looking options as well.
The thing you need to know about Killen's is... you must be prepared to wait! We've been twice now, the first time it was 4th of July. We arrived as they opened at 11am and we waited two hours to get to the front of the line. During our more recent visit we were smarter, we arrived ~45 minutes before opening (on a Saturday) and we had a nice shaded spot to wait. Killen's does make the wait worth it though, they regularly have someone come around with free beer (tips recommended). Any long wait is made better by FREE BEER.
Overall, go to Killen's. The wait is time well spent working up your appetite and the food is nothing short of awesome.
